As the Bistrot de Lyon’s Manager since 2019, Kevin Le Boulc’h chose to work in hospitality “because of my passion and my people skills. I started out in Paris,” he explains. “I learned the ropes at Gallopin, with Monsieur and Madame Alexandre, initially working as an assistant behind the bar. I moved on, from one restaurant to the next, gaining valuable experience and learning more about this wonderfully multi-faceted profession, including management and team leadership.” After his last role in Paris at a renowned restaurant in the 16th arrondissement, where he managed 80 people, he moved to Lyon, a city with which he and his wife quickly fell in love. As the manager of a fish and seafood restaurant, he spent two years getting to know his clientele and the city before the pivotal moment when he met Jean-Paul Lacombe in 2019. There was “an instant personal and professional connection” which prompted him to accept the challenge of managing the Bistrot de Lyon.
As he says, “Originally hailing from the Côtes d’Armor region in Brittany and having recently arrived in Lyon, I was proud to have the opportunity to join an iconic restaurant and manage a genuine institution.
On rue Mercière, we’re lucky to have the passing tourist trade and we owe that to Monsieur Lacombe who was the first person to open a restaurant here in what has become a strategic location.

Kevin Le Boulc’h is a firm believer in the importance of passion and sharing knowledge and expertise with others. “I’ve always been very communicative and a real team player. I’ve got a flair for management and I want to help teams to improve, to get the best out of them and to help them grow.
In both my personal and professional lives, I’ve always been surrounded by people who’ve shared their experience with me: my grandfather, my first manager. We have to reciprocate by sharing what we’ve learned with other people because knowledge is meant to be passed on.”
